These are immense for breakfast, lunch or dinner. The recipe was passed to me from my mother-in-law and my husband and I eat them all of the time. If desired, peak subsequently grated cheese and heat in microwave until melted.

  1. Boil the potatoes in a large saucepan until they are soft, but not mushy. Drain and return to the pan.
  2. In a large skillet, brown the sausage until there is no pink left. Drain and set aside.
